Tasting Notes: Fuzzy Peaches, Oolong Tea, Jasmine. Named after Diego Bermudez’s daughter, this highly sought-after Geisha lot is produced by Diego and Alex Bermudez at Finca El Paraiso in Cauca, Colombia. The Bermudez family are pioneers in coffee science, utilizing precise bioreactors to monitor every variable from pH to microbial load. This lot undergoes a complex double anaerobic fermentation with tropical yeast, followed by a signature “thermal shock” wash—a rapid temperature change that locks in aromatics—and controlled dehumidified drying. The result is an incredibly sweet and dynamic cup, reminiscent of peach candy and floral oolong tea, with the clean, elegant finish typical of high-altitude Geisha.
